Not a class but you can brew your own Wine or Beer at the Brewers apprentice in Freehold.

I have press at home etc. I just wanted to get more knowledge of winemaking.

Mistucky Creek, right over the border in NY State routinely offers classes.

NJ Home Brew in Sparta, NJ has classes from time to time.

My wife bought me a 3 night wine making class for Christmas (Spread out over 6 weeks as the wine ferments etc).  I went to the one in Whippany but they have several other locations throughout NJ.  

It was a good time and pretty informative.  They also sell supplies and if you want you can buy all the stuff you need and either make it at home or if you want you can make it onsite and use their equipment.  I had a good time and Ron, the guy running the class was pretty cool.  Here's a link to the site:
