from my little mishap, is it legal to drive with my left leg in plaster (below the knee)
My boss has offered me an automatic so I can get around.

I'm not so sure

Technically, I believe not.

IIRC your insurance company would be ones who would advise you best, and your Doctor may have to declare your fit to drive for any ionsurance company to consider you fit to do so..

The insurers will OK it as long as your doctor has passed you as fit to drive. Can't see the docor being willing to do that because of the liability issue.

Same thing happened to a colleague of mine, he drove an automatic for 8 weeks, assume its OK as I worked for a large company at the time with a very good HR department, not sure they would have allowed this if it wasn't legal.

You should be ok you don't need to be able to use your left leg to drive an auto and your cast will stop you trying to find the "clutch"
