The infected people in 28 Days Later and 28 Weeks Later aren't exactly the zombies you normally think of when you hear of movies such as Resident Evil and Dawn of the Dead. They are infected with a "rage" virus which turns them into manical individuals hell bent on just killing you,not necessarily eating your brains(although they would probably do that). They're still zombies in that they can no longer think and act on their own,just on what the virus makes them do.
Do anyone find it ironic that the virus is first released animal rights activists trying to free some dogs that had been experimented on with the virus.
