If I sell a rifle to a friend of mine here in our great state (non-crook county) is there any paperwork I have to fill out?

I have a friend that wants to sell me his FN shotgun with tactical light and aimpoint real cheap but asked what paperwork is needed...I don't know...

I'd make a xerox of your and his FOID cards, write down the serial number on the firearm and write up a basic receipt for the transaction.  In IL, you're supposed to keep records for anything you sell / buy for 10 years if I'm remembering correctly.

Even in a private sale of long arms don't you have to wait one day between when money exchanges hands and when receiving said firearm?

My understanding is that the wait period starts once you agree on the price. i.e. if we agree on a price via email or phone etc. the wait begins. I don't think it involves meet FTF than wait and meet again.
