I was at a restaurant/bar at Fremont, and had the BEST Brandy 'old fashioned' with MUSHROOMs, yes mushrooms in it.

The key was, they tasted sweet pickled with a worchestershire sauce (WS) taste involved.

They would not give out the recipe...damn.

So off to replication I go.

I bought some mushrooms, pickling lime, spices, WS, etc and for months have been painstakingly keeping my measurements as I continue to fail the replication process.

I CANNOT replicate it and believe my pickling SOP is the problem.

What am I doing wrong? No idea, so I am soliciting ideas from those who know how to pickle 'sweet'.

My next step is to buy already pickled mushrooms and add the WS but know that is not how they are doing it because their mushrooms are monsterous and emulate fresh pickled characteristics...

Help please.
