My grandmother used to make fantastic apple pie. She would only use bruised apples, cinnamon and caramel.

This is the recipe I got from FE toilet paper:

1 gallon apple juice
1 gallon apple cider
3 cups sugar
1 Tablespoon Apple Pie Spice
10"ish" cinnamon sticks
1 Liter 190proof everclear

heat first 5 ingredients thoroughly, allowing sugar to dissolve completely
remove cinnamon sticks & place in whatever containers you'll be "bottling" it in (the gallon jugs & the everclear bottle make handy little containers)....in this case, 4 in each gallon & 2 in the liter
cool fully..the cooler the better..prevents alcohol from evaporating when added to mixture
Add Everclear

DONE!

Pretty much the same as mine, except I remove the apply pie spice, and dump in a handful of whole Cloves, and cut back on the cinnamon sticks by 3 or 4.

Mine is fairly similar to above.



50-50 Cider/Apple Juice

2 Cups sugar per gallon of liquid

4-5 Cinnamon sticks per gallon of liquid



Bring to a low simmer for 15-20 minutes. Allow to cool completely (room temp or lower).

Everclear to taste. (I use a 750ml bottle per every 1.5 gallons of liquid, ie: 1 and 1/3 bottles in a 2 gallon batch)
