When I order my steaks & burgers, I tell them: It's not done 'til I can write with it. If I drop it, it should shatter.

I like my burgers when they look like hockey pucks.

But then I like everything burned (except eggs... )

LOL.  Yeah, I was just happy to have steak.  I hadn't cooked one in a while.  That tutorial helped immensely.

Nah.  I made a few small incisions into the meat and put seasoning in there.  I also pour the drippings back into those cuts as the steak cooks.  It give it more flavor and helps retain moisture.

Notice all that juice on the plate?  Just imagine a medium-well steak that is literally dripping with flavor.  That's what I had for dinner last night.

"Done-ness" may be subjective, but I'm sure we all agree that it tasting like crap is not an option.
