Well, just got back from hunting and I got my Javelina.

I am looking for a good meat processor in the east valley that's not TOO expensive.  I just want to turn it all into sausage.  Last time we had it done, they mixed some pork in with it and it actually was pretty good....  but for the life of me I can't remember who we used.

Yea so far I called them and the one in Queen Creek and both want around $75 for the pig....

Last time I did it, it was around $35.  I'm not paying $75 for a few pounds of sausage....

The only people I've ever seen eat javelina were the Mexicans laborers that were hired to install the game proof fencing on a ranch I was hunting in the Texas triangle.  And I saw one of those mother fuckers kill a road runner with a sling shot and eat it too.

It's simple enough to do it yourself..
Chorizo recipe
Hand grinder
or
Kitchen aid station with attachments

You can find what you need at Sportsmens,Bass pro,Cabells,etc.
