Soak in buttermilk, toss in season flour then pan fry in cast iron? Bout the best way?

yep. use canola or peanut oil . That's a fine mess. Stewed with large can of Cream of Mushroom soup, can of milk,salt, pepper stew until tender add frozen mixed vegetables then over white rice is good too.
