So I got the Schuster nut for my M1 Garand so I am not limited to surplus ammo. How do I know when it's at a "safe" setting so that the op-rod or receiver won't get damaged?

Will I have to open it up fully and then screw it back in whenever I get a new type of ammo and just remember how many turns it was?

It just seemed to me that it didn't need to be closed a lot to function reliably with some Remington 180 gr core lokt ammo, but had to be in a good bit for reliable function with M2 ball.

What I remember reading about it said to screw it out so it does not operate the slide, then screw it in until it does. Don't screw it in more than necessary to operate the action.
Hopefully someone who knows more than me will be along soon.

Yep, back it out until it's flush with the end of the plug, then take the set screw in half turns until the rifle cycles cleanly.
Note: different types of ammo will take a different setting.

And do remember to count the turns back in so if you do need to remove the plug, you have a idea of the old setting in on the set screw.
