Looking to rehandle a couple knives and cut my teeth on some kits as well- so very little metal grinding going on.

So that being said, would a HF or big box store model suffice? I know many smiths advocate for at least a griz, but I'm not sure that those grinders aren't a wee bit overkill

ETA: Would a 1" or 4" model be better?

What you want is a sanding station or a drum sander.
Grinders are ONLY for ferrous metals or metals that spark.
With a sander you can sand all types of metals, woods and plastic.
Harbor Fright should be fine if your on a budget. Yes there are better
Manufacturers out there  but just get what you can afford. Maybe check out Craigslist.  

Edit- just re read your title. A 1" belt should be just fine.

Go with a 1" belt. The Harbor Freight will work but it runs fast so you need to be careful, use belts like they're free.

Pick up some scalloped belts too, they won't dig in at the corners and are helpful in curved areas.
