I am in France for work and want to know if anyone has an opinion on French knives. My French colleague suggested that I get Nontron and Thiers knives so I did...
I am here for another week, is there anything else I should consider for "bring back" opportunities?

My only experience is with Opinel and Laigoule (sp?) And while they are both extremely easy to sharpen to a surgical edge, neither are robust enough for my personal taste.

Opinels are almost unbeatable for the price.

The Thiers and Nontron are supposedly somewhat regional and since I am here I picked those up. I will look for Laigoule when I go back to Paris. Of course, Opinels can be found pretty much anywhere.
I am really starting to like the Thiers. It accompanied me on my journey today.

Laguiole is a generic term for a style of knife. Most Laguiole knives are produced in Thiers. Look for a folder with a bumblebee on the back. They range from workaday folders to high end custom knives.
