Looking into a Buck Alpha fixed blade for dressing game.  They have two steels, 420HC and S30V.  I'm a big fan of S30V in Spydercos, but find it time consuming to sharpen.  I like the fact that I can sharpen 420HC in the field if needed and quickly get a razor sharp edge.  

How does 420HC hold up when field dressing a deer?

People have been using Buck knives for that very purpose for decades.

Should work just fine. Its a pretty standard knife steel. S30V is definitely leaps and bounds better though

I have a recent 110 with their 420HC steel.  They do a hell of a job with their heat treatment and they seem to get all the performance out of it that's possible.  It is a mediocre steel but ease of sharpening is the big benefit.  I haven't used their 420HC to dress a deer but in my experience the edge holding is fantastic for what it is.  I'd say it's as good as 440C which is a great knife steel even though it's not in fashion anymore.  

I wish that Buck would make the 103 in D2.  It would be a near perfect deer knife.  

As far as S30V goes, these little diamond sharpeners and the Lansky ceramic dogbone are my answer for sharpening S30V in the field:



I had these handy when I boned (not dressed) a medium sized deer with a Spyderco Manix, the original model.  I didn't really need them, It would no longer pop hair when I was done but it was still plenty sharp.

It's a good general purpose knife.
Very sharp out of the box.  If  I remember,  skinned about 4 deer before it needed resharpen.
