I'm expecting a new .50 upper to arrive any time now, and I haven't gotten around to buying everything to build a dedicated lower yet.

So my question is would it be safe to shoot it with a standard M4 collapsible stock?

If you like scope eye.  Seriously though, I have never shot one with a collapsible stock and would not want to unless it was pinned open.  If funds allow, get a solid stock of your choice with a nice pad on the end.

It would probably be safe.  I doubt it would be pleasant.  The Standard A2 stock with a slip-on pad is about the minimum stock necessary for shooting 50 BMG on an AR platform.  I use the ALS stock, available at www.50BMG.net and it is very confortable.  I'm sure the ACE brand stocks would also work well, they just don't have a flat bottom to ride well in a sandbag for recoil follow-through.
