So my questions are:

  1. where do I find NOMEX gloves?

  2. is it OK to spray it with water or something to cool it down?

Nomex is to prevent burns from flash, being exposed to longer heat it will melt or burn.
You want asbestos gloves.

Best thing would probably to just let it cool down on its own.

Welders glove
You can cut of the rear part of the glove,sins you dont need that  

Owen mitten could be used, but i would prefer the welders glove (fingers )

I have a pair of welder's gloves; I never thought of using them. Thanks.

The G5 manual says to wear NOMEX gloves, which is why I asked about them. I didn't realize they melted. Thanks for the pro tip.

I am no pro but the welders glove was a logical solution, they do help me  handling hot items  
Some of my friends use them  to ,when they change the hot barrel on the MG62(MG 42)

I melted my nomex gloves when trying to remove my M4-96D once.  Go with the welding gloves, you'll be glad you did!!!

I've got a high-temp oven glove (the type with fingers, not the Arby's ad type), left over from my days as a chef.  I use it to remove cans.  They sell them at places like Bed, Bath & Beyond or Linens & Things, for between $15-20 each.

I've poured water on my YHM Phantom 7.62 QD when it's been smoking hot, and haven't hurt it.  My next test is to freeze a bucket of water, to see how quickly I can melt the ice after dumping a few hundred rounds through the M-16.

How about those High temp silicon gloves in bright colors?  Didn't RS use one in a video of a Beta dump through a 7"?

I have a nomex & leather cover for my MAC can.  It doesn't melt, even when the can is hot enough to sear skin.

Yeah, I blocked out the serial number. The rest of the stamp is as-is, though.

I wouldn't put a cover on a can, except for maybe a bolt gun.  It keeps the heat in, and they get HOT.  Let the can cool off, or get some gloves.  Or, let it cool before you take it off.
