I am thinking of storing a shotgun or two in a metal case similar to this;

http://www.americase.com/catalog/Value-Series-Cases/AT-VS-3814H.aspx

Would this work better if I removed the foam, that way there is nothing to absorb moisture (I.E; Just a bare aluminum case with say toolbox liner).

My thinking is if there is no foam for long term storage, there is nothing to absorb the water to cause corrosion inside the case.

for that kind of money you can buy an airtight Pelican case

Leave the case open for a couple weeks in a climate controlled environment then store the gun with a light coat of VCI oil or a VCI bag and place in the case with several dessicant packets.

I have had a couple guns stored in this manner for years with no problems.
