I need to build some portable shooting benches for a shooting class Im teaching. I'm looking for something that can be taken apart and assembled easy at the range. Does anyone have anything?

I ended up buying an MTM shooting bench, $70 through Amazon.  Very light plastic table top with folding legs, built so  right and left hand shooters can use bench without changing anything.  The only real drawback to this bench is that the legs will not adjust for uneven ground which isn't really an issue for me.  The bench makes for a stable shooting platform and would be practical enough to take prairie dog hunting.

For me I liked the MTM bench better than some of the home made benches.

I actually use one of these as a portable shooting bench.

It is small and lightweight and easy to transport. It only cost me ~$30. It is not rock steady on its own but you can straddle the legs across an uneven surface and use sandbags or rocks on the foot of the legs in order to give it some stability. It does get slick if it gets oily so I always through a towel over the top to keep things from rolling off. It makes a good surface for adjusting optics / sighting-in, organizing and testing handloads loads and taking notes as well as keeping your spotting scope at a comfortable height.

Where did you buy that and what kind of seat do you use?

They can be found almost anywhere. I believe I got mine at Walmart a few years ago.

I use something like this as a seat. Make sure it sits high enough for you to be comfortable behind the gun. I found mine at DICKS (before we started to boycott them )
