The Medium should def work.  I'm 5'9 about 170  and it fits perfect.  I have a large plate up front and medium plate in back.  Lots of area to put mag pouches and the like on.

Chest size at the moment is 37" but i just started a year-long workout program so the measurement is likely to increase a little.

Get a small/medium and medium SAPI plates.  If going with other plates do some research to make sure they will fit.  IIRC The rear plate pocket is smaller than the front and will not fit most standard 10 X 12 plates.  I would go with medium SAPI sized plates or smaller based on the info you provided.  If plates are too large it will cut down your range of movement and comfort.  You are right at the cutoff between small and medium military SAPI plates.

For color I would go with Multicam or ranger green.

I have 10x12 full size plates on the front and back.   They fit just fine.

The issue with the Eagle carriers is that the rear plate must be the "operator cut" style to fit in the back, unless you're going with a plate much smaller than the carrier was designed for.

So, 10x12 operator cut plates will fit fine in the S/M EPC.
