Moving to 88 acres in the county, will have some turkey, dove and duck hunting available.  I have quality AR15s but only a home defense 12 gauge.

I'm not into $1,000+ shotguns, I'd like to stay in the $500-$800 range if possible.  I think I'd prefer a semiauto if possible.

I've looked at Stoger and a Remington V3.

Remington Versa Max Sportsman.  ~$800 shipped on Gun Broker.

I love the Versa Max action.  Fast, reliable, and soft recoiling.  But truthfully, I don't know the difference between the VM and the V3...  Either way, I can say from experience you can't go wrong with the VM.

Yes.

I have some aluminum recievered Beretta semi auto shotguns that I purchased in the mid 90s that have over 100k rounds through them.  I replace the wear parts (hammer braces, extractor and extractor pins and springs, firing pins and springs, recoil springs, connecting rods) when needed; the receivers are fine.

And the earliest that I have ever had to replace a wear part is a connecting rod in the 390/391 series, at about 7500 rounds.

The V3 is a 2.75-3" chamber while the Versamax is 2.75-3.5".

$500-$800 budget? Two used, 1970s 870 Wingmasters. I have two that I paid a total of $670 for, tax included.

Prefer semiautos? 1100/11-87. Again, know your date codes and get a used one from before the mid 90s.

V3 "seems" promising if you don't need a 3.5" chamber. Still pretty new to tell, though.

biggest drawback is the damn rubber O-rings in the gas system. They always seem to fail at the worst possible time. Usually not an issue if shooting magnum loads(actually, I shot a lot of magnums through one I bought used without an O-ring before I knew there was supposed to be one) but with anything lighter, if you break one you'll know it the next trigger pull.
