So what is the big negative to a single trigger on a double barrel O/U ??

Or, why are double triggers so much better?

Double triggers are more traditional. That is the only reason I see. Single triggers are more practical for about every use you could imagine. Whoever told you double trigger guns are better need to wake up, IMHO.

I'm not up on O/U guns, but the most commonly stated downside is the single trigger is more complicated.
Many O/U guns have a selective trigger system that allows selecting which barrel to fire first.
Cheaper guns may not be selectable and will always fire one barrel first.

However, a key here is that virtually all quality O/U guns have a single trigger, and you seldom ever see one with a double trigger.

A double trigger gun, (if you can find one) is a simpler mechanism and you can select which barrel to fire by using that trigger.
The down sides are, you have to shift your finger to fire the other barrel which can disturb aim, you have to "remember" which trigger fires which barrel, and double trigger guns are almost always cheap, lower quality guns.

I was pretty much with you until the last sentence.
