Is the FNX-9 available in a decocker-only model? I checked FNH's website, but it doesn't go into depth about different models.
I'm not a fan of manual safeties, but I'm really interested in an FNX-9.

Nope. The FNP had decocker only models but all FNX's have the Safety/Decocker. I have not seen anyone DIY disable the safety aspect of it to convert it to decocker only either.
