Well I am going to probably piece together a 1911 just for the hell of it. I am wondering about the different finishes available. I have heard about Ion Bond and Yukon coating but what else is available. I really don't want another blued 191. Any suggestions?

There's a shit ton of finishes out there. Some are similar just named different. Here's a few:
Melonite
Hard Chrome
Parkerize
Cerakote
GunKote
Electroless Nickel
Hard Hat
Birdsong Black-T
I'm sure i'm forgetting quite a few but it's a start.

I am looking for a color off the beaten path a little. I don't need black or green. Got that covered. Just something a little different. Are the finishes listed available in different colors? Thanks again.

A "kote" finish is probably your best bet if you want a special color.
As the saying goes for Melonite and IONBond, you can have any color you want as long as it's black.

I'm pretty sure you can get a Birdsong finish in Desert Tan and Dark Earth. Otherwise your best bet is Cerakote or Gunkote.

Unless you're using an aluminum frame you don't need anodizing. In either case if you buy an aluminum frame it may already come anodized.
