Netted just under a grand for Chistmas cash, $900 +.  Always wanted a 1911 but always bought something else.  I have; a Ruger MK II, Sig P239 in .357 Sig with the 9mm conversion, a Ruger Security Six in .357 Mag/.38 Special and a Desert Eagle in .44 Mag. (Ya I know, I know.  It IS the funnest hand cannon of the group).

Anyway I would love a Colt 1911 like I played with in the Army.

Now for the Questions.

What should I get that is as close to what I had issued back in the 70's?  I want mil spec parc, wood grips...what else.

Where can I get the best price for above?

Springfield Armory Mil-spec use the left over money to get a reliability job done on it or dehorned.  Or leave as is good some good mags and ammo.  Personally I would suggest moving to atleast a SA Loaded for a little more with better sights.

Dan Wesson makes some killer 1911's also just stay away from listed brands (para ordance, taurus,)  
RIA (rock island armory) makes a good GI/mil spec style that is inexpensive and pretty nice.  I just toyed with a Citadel today and I was impressed by part of the pistol but was confused why the main spring housing was not mounted in flush at all or the front sight was not flushed to the slide it was left boxy but the over fit of the pistol for the price was really good.  The trigger needed work desperately I would have bought it but the owner would not come down to a price I would pay for the pistol.

But what you listed I would suggest the SA Mil-spec as my first choice or a Colt if you can find one in your price range with the options you like for the price you like.  The Colt will run you more and it will if you are looking for a Mil-spec kind of setup it will have a plastic main spring housing but can be changed.  Kimber also makes some nice pistols in that price bracket that you might like to look at.

Shot a Mil-Spec yesterday. I didn't have any problems with it for what it is. It was flawless with ball, but would not run any hollow points. If you stick with ball, you have a very nice pistol, pretty dang accurate too.

The Colt Series 70 Reissue... should be $800-$900.

Look around... best place to buy Colts is really in-person, due to some variance in QC (mainly cosmetic issues).

ETA - Or just pick up a blued Colt 1991 NRM - easier to find and less-expensive, though it will feature the Series 80 FCG, a long trigger, and a flat MSH. A repro-70 will lack the S80 parts and feature a short trigger with an arched MSH. S80 parts can be removed and a blank installed, and of course triggers and MSHs can be swapped with ease.

Buy a Colt Series 70 GM ($900) or a Sig 1911 ($799)- both are excellent shooters out of the box.

I would say either Colt or a Springfield but look at it this way.  If both of those pistols were laid out on a table in front of you and you were told you can pick one for free no charge which one would you pick?  That's the one that would make you happiest or that you really wanted anyway.  For me Ill always pay a little more and get a Colt, nothing against Springfield or the others though.

I have one and love it.  Not a single malfunction in a little over 500 rounds.  Mine was $670 NIB about 2 years ago.

Slide to frame fit has been pretty good and consistent on Colts since the early 2000s. Machining of the slide, namely the hole for the recoil spring plug, was a problem last year though.

This is true the majority of the time I have seen some though wonder how it ever passed QA and left the factory.  But I see that with other brands to be fair not only Colt but SA and other higher quality production guns.

I got a new Colt series 70 Nov '08 . I love it. It is more reliable than my old series 70 from 1975. The new one feeds HP ammo.
