I need to find out how much to insure a US Prop marked 1911 (s/n 291,xxx)

The frame is park'd, the slide is blued, so I'm guessing it's not original,
in addition, my great uncle added an adjustable rear sight at some point and a higher front sight to go with it.

That's really the funny part about 1911's, and guns in general, if they're older, you either don't touch them at all or you should just completely tear it down and modify it, because once you start doing stuff like Parkerizing them, or changing parts, you lose the authenticity of the weapon.
