What is involved?  If I get a frame and slide fitted I belive I can fit the rest myself.  Any advice?

It largely depends upon the "kind" of 1911 you wish to construct. If you have a "complete firearm" (a receiver that has been fully driller, etc) you can even do the slide-to-frame fitting yourself with the right files and a vice. If you get 100% "drop-in" parts, you might luck out and have a pistol that requires minimal work and ranges in quality from "slap-dash" to "fair." Even "drop-in" parts require minor fitting, however.

I would say that above the frame and slide fit is the barrel fit/timing.  You can have a great gun, but if the barrel is off, it's a fishing lure.  If you want to, 'do it yourself' off a starter, do so after having an accomplished gunsmith fit the frame, slide and barrel.  After that, you can definitely do it yourself.
