Okay, I'm totally new to the 1911 platform, and I'm currently in the market for one.  Went to my local shop, was checking out the SA G.I. they had for $460.00.  The tag hanging off the trigger guard said "capacity 7+1"...but it was a double stack.  Was this a high-capacity model that was mis-marked?

No it's a single stack.

It can be 7+1 or 8+1 depending on the mags you buy.

I guess what I'm asking is, would they make a double-stack mag thats only a 7 rd. capacity?

No. And the US GI model is single stack. I don't know what you were looking at but I don't even think Springfield makes a hi-cap 1911.

They actually do, I checked it out on their site and it looks like the one at the shop.  I'm wondering if I shouldn't buy this before they realize it's tagged wrong.

But it.  They make more than one Hi-Cap.  One is a milspec.

They do make a hi-cap Milspec.  Check the '05 catalog.  Sounds like the pistol was tagged wrong.
