I bought a GI parts kit from Sarco, and an 80% Frame.  Everything seems to be good, safety functions etc.

One small problem:  When hand cycling the gun the hammer follows the slide back maybe 1 time in 10.

Most of the time, the hammer sets properly:

1 time out of 10 it follows the slide back like this:

What could that be?

LOOK UP HAMMER FOLLOW.
sear spring or hammer sear interface.

OK, so actually I realized I had my finger on the trigger when cycling the slide.  So some more checking and I see that finger pressure on the trigger causes the hammer to fall after the slide goes back into battery.  I guess I have a disconnector problem.

How hard are you allowing the slide to go back into battery on an empty chamber?

I've built on several of those kits. They are way out of spec. There is no telling what is dimensionally out of spec, if not everything. Do you have a functional 1911 there to take apart and look at for reference?
Is that the grip safety they gave you? It is cut for a commander hammer, I think. And it looks like your frame is cut for a beaver tail grip safety. Who's frame are you using?

Clean and lubed first
Sear spring leaf next.

Hammer hooks and sear nose after that.

It does not take much.
The hooks are 0.020 in.

And if the trigger has any type of over-travel stop take it out for now.

You're right about the Grip Safety, it's the Sarco one, but the Frame is cut for a beaver tail.  (Stealth Arms 80%)
I'm going to replace the Sarco internals with Wilson Combat parts, and Stealth Arms has a beaver tail grip safety made specifically for this  frame.

I shall start over.

It can be fixed. You need to take off the grip safety so you can see what's going on in there. Remove the slide and press down on the disconector from the top. It should thus disconnect the trigger from the sear. You could file on one or the other until it does. If that's your problem. Don't pull the trigger with the slide off though ( frame damage)

You should replace all the springs while you're at it, my recoil spring was so week it wasn't going into battery fully. Your sear spring may be your only problem.
