Can anyone speak to the build quality, fit and finish and just over all feel of these two pistols compared to one another?

Any other options in that price range with those features I should be looking at?

I currently have an older imbel springfield loaded, how do these compare to that in quality?

The answer will always be SA, because they make a 1911 for just about any need you may have.

There is no comparison. Springfield Armory MC. I think the only reason someone might purchase an S&W over an SA is either brand loyalty, or they just don't know any better.

MC Operator. Having owned/handled and shot multiples of each and The S&W E Series 1911's are good guns, but the SA Operator is definitely the better of the two.

Absolutely nothing, the S&W  E Series 1911 TA is a fine pistol and runs as smooth as silk,  with a lifetime free service policy behind it.

You can't go wrong with either.

You should look into some of the 1911 offerings by SIG as well.

I have both 3 Springfield's and 1 Smith and would buy all again. The Smith has checkered front strap and came with night sighs and a better finish/dehorned. Would be an easy choice for me Smith, plus the Smith trigger will be better out of the box, they have a way of fitting them that is better if I remember reading right.

You ought to take a serious look at some of the SIG 1911s that are configured the way you want, they're also excellent pistols and offer lots of value.

Of the two SA..... It does not have an external extractor like the S&W and not swartz safety.  1911 looks so much better with an internal extractor.

E-series. I've owned both, the 1911 TA I had was a better built gun than the TRPs and operator I have owned. Dollar to features the 1911 TA it is an outstanding pistol. Front strap checkering, flat topped and serrated slide top and rear. Those additions alone would cost several hundred from the SA custom shop. The Springfield's are great guns, but everything beyond the basic loaded is overpriced these days IMHO. Either gun will likely be very reliable with good mags and ammo.

Springfield MC Operator all day long! Its my favorite 1911 by far.... Just got a Springfield RO LW Champion that is probably going to give it a run for its money....

So much of an improvement it showed up on the 1908 version and then was absent on the 1910 version on the development towards the 1911 and then the 1911A1.
