I'm looking to buy 3 basic or close to GI model 1911's, I looked at Springfields, Para, Taurus, and the new Remington's. I plan on someday giving one to each of my boys. Any other suggestions or comments? I want to stay below $600

Not really many options with the criteria you mentioned.
I would personally try to put a little more towards each and maybe get the basic series 80 colt for each.
Since these are goin to be heirlooms

I would suggest...

lowered ejection port not 1911A1

dovetailed front sight

some form of beavertail

one piece barrel (the early Springfields had two piece barrels)

trigger with overtravel stop so you cannot trap the disconnector

no Colt finger bushing

if .45acp an original extractor not one of the spring loaded gizmos

everything else can be fixed

I wouldn't recommend a Taurus, Para, or Remington.  

Springfield, Rock Island, and the other Phillipine guns are what I'd consider for the entry level guns.

I decided to spend a little more and got the 80 series Colts. $660.94 each. Have to wait 7 days before I get the next one!
