Is there a good/easy way to tune the ejector on a 1911? Shorten it a little? Basically, I (and a buddy) want to stop chasing brass that's thrown 20 feet away. Reduced loads and heavier springs are helping a little bit.

How the hell do the professional (Rob Leatham) get their brass to eject neatly at their feet?

Well, ejectors are cheap. I'd get a couple surplus ones and go to town. Grind off a little at a time and see what happens. Preserve your stock part just in case.

I don't know the finer points of ejector tuning but as cheap as parts are, it would seem to be an inexpensive experiment.
