Will a P-01 fit in a kydex holster made for an SP-01? Not having an SP-01 in hand and just being able to look at them online, all I'm seeing is a difference in barrel length and grip size? Kind of like a Glock 19 - 17 concept?

My girlfriend's P-01 fits into my SP-01's holster just fine.

Fit yes but I would think it would be a little awkward. I do own both

Yes, except a tightly fit Kydex SP-01 holster with no adjustment. The aluminum frame on a P-01 is wider than the steel frame of the SP-01.
