Because that's they way they come.

They are protected from the elements and are very slick to help speed insertion/drop free.

Yep. With just how slick they are, empty mags easily drop free every time. Usually not so with polymer coatings, or other finishes.

Curious why it matters? Carry in a pouch if signature is an issue. After firing 13 or more rounds and needing a reload your position has been compromised far greater than the flash from a shiny mag will ever accomplish.

One guy had a question on here one time that said, "XD mags are stupid, how do I hide this really reflective stainless mag?"

Eggs-Zachary!  I got into a similar discussion with a couple buddies (both are Glock lovers) and this was my argument as well.
