And it came with a P2000 Sub Compact manual.  That doesn't seem right.

haha it's not.  My dad's P2000 came with a USP compact manual.  Apparently it's just not too uncommon.  Really, the manuals aren't much different.  One talks about manual safeties, the other talks about grip panels and an ambidextrous slide stop.  There are a lot of solutions to your problem though.  Contacting HK is #1.

Well, I know how to strip and maintain a USP since I already have one, but I am definately going to contact Hk for a replacement manual.

Got another question:

Is it normal to hear the little plastic ring travel up and down the guide rod/ guide rod spring when no rounds are chambered?
