The problem... I have a new to me LW champion operator that when I got it, was reported to have around 700-800 rounds on it.   When I got it, the weapon looked litterally unfired, or at most tested at springfield.

Now, when I took it out, I got the classic 3 point bind with 230 gr ball, for about the first 100-150 rounds of winchester white box that I tried.  This was seeming to occur like 2-3 times per mag  In an effort to see if it was possibly magazine related, I worked through the majority of the mags that I had lying around, a mix of 7 rders (brown and generic, gi) and 8 rounders, chip mccormick, wilson 47ds, and several others.   Still the same issue.   Called Springfield, they said to run other ammo and try it out.   did so with with a mixture, of 230gr golden sabers and 200 gr gold gots.   It ran slightly better but still not there, with several per.   It may have possibly ran slightly better with the lighter bullet weights.  Called Springfield again and was told to shoot it some more......

Did so, using 2 brand new, power + mags that I unwrapped for just this, using 230gr ball, still the same....Noticed however that the brass seemed to be thrown an erratic distance and pattern.  Out of desperation, I grabbed some of the 165 gr Federal Personal defense loads that I just happened to have with me....Gun ran perfect as fast as I could run it......

Could this issue be only extractor or could I for some reason have a recoil spring issue where lighter weight projectiles run in this gun better?

Although I believe your problem to be extractor, I've got to ask. Is this something you want to fix yourslf or have a smith fix ?

Honestly, I too think it's an extractor, but the functioning fine with lighter weight rounds, and hydroshocks at that and the worst functioning with ball is what was causing me to wonder.   Right now, I am trying to see if springfield will fix it, however if I can't get them too, then I will probably try to work with the extractor myself.   At a guess from gauging the tension that a round is held against the breachface with the slide pulled and the round slid up under it, that I would guess that the extractor is overtensioned.  Another point that I forgot to mention in the original post was that for the first 50 rounds of ball that I tried on the first session, the case mouths were getting dinged up, however that went away sometime before the fifty round mark in the trial.

At worst, Brownells is just up the road from me...I can probably find a new extractor there

Different manufacturer's have different case and rim dimensions. I 'd never really experienced the difference until I switched to Hornady. Then I started to experience all kinds of problems. So I removed extractor and firing pin(because I'm paranoid about putting bullet holes in the house) and cycled. No problem. So I went back with a file and widened extractor mouth. First time I'd ever had to do that. But then I didn't have much experience with self defense rounds in a 1911 either. My carry was an XD45C. Really your problem is solved with Brownells down the street, how sweet ! I live 5 miles from MidwayUSA and 45 miles from Graf & Sons so I really use those resources. Graf had a guy by the name of Jason Perkins at the help desk until a year ago and he was always good for an answer to a cure. He opened his own gunsmithing business ( Perkins Custom LLC )so I didn't loose out. Brownells should have someone just like Jason that mans a help desk who would be more than happy to teach you how to tune an extractor or anything else you need.

Pull the extractor (and firing pin for safety) out of the gun and hand cycle some 230 ball. If it doesn't hang up you have your culprit.
