I see there is only a 5mm difference in height between the 2.  I don't think that will be too big a deal even if I have big hands.
Has anyone shot both?

I believe one has the full sized frame while the other has the medium sized frame with 2 less rounds in the flush fitted magazine...

This.  Both have the same length slide.

Compact has a shorter grip, for 15-round magazines fitting flush.

Carry has a longer grip, for 17-round magazines fitting flush.

I have the compact with the medium grip. 15 round mags with it that fit flush. If you have interest in concealing g it go with the compact. Even my compact (9mm) has close to no recoil which makes follow ups and double taps a breeze. Not to mention ive put close to 4000 rounds thru her without a single hangup or misfeed. A great gun. Really cant go wrong. And even my compact looks a decent enough size when on my hip to be plenty intimidating ;p

I have the compact medium 15 rd mags flush fit great all around weapon.

Have as of today 3500 rds flawless.

I just picked up the P320 Carry. Comparing it to the Glock 19 I conceal carry with the magazines in both guns, the grip on the P320 carry is only around 5/16" longer than the Glock 19, while giving me 2 extra rounds.  Seems like a pretty good trade off to me.
