I just picked up some 12 rounders from TopGlock.com. I also bought the extension kits for my factory 10s. The extensions seem to be 11 round, one mag fits 12. Maybe the springs need to seat.

With the new 12, I constantly have to slap and tap the mags to seat the bullets and stop the rattle. Is this normal? I am seriously thinking dropping to 11 rounds.

The rattle is normal, try it the next time you are at the range, it will work fine. The problem with the "11rd" mag most likely is the locking insert is not seated into the bottom of the extension correctly.
