How difficult would it be for someone with no experience working on AKs, no metal working knowledge and nothing more than a very basic set of tools (screwdrivers, a couple wrenches, a hammer, etc.) to replace the FCG in an AK?

Also, are FCG parts universal to any AK?

You should be able to replace an FCG with nothing more than a small flathead screwdriver and a pair of needlenose pliers.

If need be, let me know, and I can do it for you.

For the most part, all AKs use the same FCG. There are a few oddballs like Galils and SAR-3s.

If you go from a singel hook fcg to a double hook fcg....you will need a Dremel to cut a slot on the bottom of the receiver by the trigger from my experience with a WASR...

I am going to put the US made FCG from K-Var in a Maadi. It should just go right in correct?

Linx310's guide

I lift the hammer springs over the ears of the hammer and tie them there with a wire tie. Keeps them from snapping back down on your fingers.  The hardest part is getting the shepard's crook/hook back in.  With an original one I may spend from 5 to 15 minutes depending on which type and which firearm I am working on.  With a Chinese type I can usually get it in within a minute or three.  The RSA retainer plate is the way to go as it goes right in.
