What, in your expert opinions, is the best postban AK currently available to the public?  i have currently only owned AR's, but am very interested in getting am AK.  Also, what are the pros and cons of the 5.45x39mm vs 7.63x39mm.

Best thumbhole AK's would be the Hungarian SA-85M for a stamped version($3-450), or the Bulgarian SA-93($350-450) for a milled version.
Best pistola gripped post-bans would be Global Trades SSR-85 series(Hungarian receivers used), nice parkerized finish($4-500).
And of course the inexpensive SAR series($250-350). As long as the parts are straight, you cant go wrong with them.

Also the Arsenal AK's SAM-7 Classic is a work of art, but you may not want to shoot it as a result. And its expensive(around $600).

I can think of no cons for either calibre you mention. Both are quite fun and readily available for around $100 a case. Get one of each, it's the only way to be sure...
