Which bayonet is the best for the AK, in terms of quality and edge? Or is there really not much of a difference?

I can't speak to the quality of the metal used on the variety of AK bayonets,  but even though they have an edge, they are not meant for shaving and thus are not really that sharp on the edge. You can sharpen them though...

That said,  if you want to use an AK bayo for mounting on a particular gun (its primary duty), then you will need one that will fit the actual configuration of your muzzle/bayonet lug.  Some bayonnets for the earlier AKs (Type I) have a different barrel support and lockup than later generations do. Type I bayonnets are "pokers" as opposed to "poke/slashers" with the edge and wire cutter.

I'd say, if I could only have one do-it-all bayo, I'd probably grab a late model Bulgarian or Russian bayonnet (provided it fit my do-it-all AK).  They seem the most functional to me...
