After a certain # of rounds would it be a good idea to change the recoil spring?  Do these things wear out like on an AR over time and use?  Are they easy to change?

Your trigger finger will probably wear out before the recoil spring will. AK's were made to be pretty much soldier and civilian proof. Should be plenty of field strip and shop manuals on the AK; just do an internet look up. Parts such as a recoil spring could possibly be found through K-VAR or possibly GUN PARTS (NUMRICH).

It proabally would be a good coarse of action to replace it every 15K or so.

If it still strips rounds from a fully loaded magazine, i would not worry too much.

How does the little clip (spring retainer?) come off? I want to try my rifle without the buffer....

There are 3 different types of recoil spring guides that I have seen or owned myself.  There is a small retainer on the forward end you remove after compressing the spring.  The retainer will then slide off and you have to be careful then as the spring can come off the spring guide under pressure and take your eye out.  The replacement spring is installed in reverse of removal.
