Even though they won't touch? Is there a way to adjust these or did I cut too much off?

They look a little on the overdone side, but not to worry! You look like you can tighten up the bolt and bring the jaws closer, also if you need to you can use a little plate to help tighten up any gap... Dont worry man, you are going to do just fine, there is nothing on a AK that is not much more than one step above blacksmithing to build.
