I am sitting here thinking about doing an AK build, but something is nagging at me. I would like to do a full build from stamped steel blank to full reciever; however, I am not certain I have the expertise/knowledge necessary. How much knowledge about metal working does it take to build a AK reciever from scratch and where can I attain this knowledge?

check the tacked threads at the top of the page to start.  there is lots of info in there.  the biggest pain is getting all the tools that you need, beyond that its fairly simple

I agree with TheRedHorseman. It is the tools that are the key to success.

I have seen a thread posted here that detailed the experience from steel blanks to rounds down-range, and it was a very interesting and intriguing project.

If you have the tools, basic know-how, a resource to call on for the tricky steps,  and a bit of patience, go for it.

I could not imagine a more gratifying endeavor.

Go to your hometown forum...  and ask around..  I am sure that someone local to you has all the tooling you will need and if you ask nicely...  they will probably let you use it...  

I get more gratification out of seeing someone build something for themselves when they doubted they could do it...  The absolute glee on their face is worth more than any build I have ever done for myself!
