I looked through this whole forum, it's late, so I very well may have missed it, but is there a post anywhere about the pros and cons of a screw build over a rivet build?

Not really.  A general synopsis would be:

rivets builds are:
more like the original (eventhough some AKs were built via weld and others milled)
if done correctly guaranted not to become loose
faster
screw builds are:
another way to do it if you lack rivet tools
work if done correctly

Either one done incorrectly could be a painful learning experience and that is the con.

For me it really depends on how professional it looks.  I have the tools and jigs to do a full rivet job on a kit but have a hard time getting the rivets to look good on the trigger guard so I use screws here.  The biggest positive for screws is in most cases they are already blued or painted.  I paint each part individually so with rivits and u-bolts I  have to go back and do a second coat after the gun is built.  

Rivets are more durable.  If you screw up it can be a pain to remove one.  Screws can be a little more forgiving if you dont strip the threads on the trunions.  Use red locktight on the screws.  Wouldn't want one to loosen up on me after a couple hundred rounds.

thx guys! I've been really wanting to get my hands dirty on a build, but have been intemidated by all the presses etc.. needed. A few things I can come up with, but the rest seems like a lot, plus I live in an apartment. Not much room. I appreciate your help.
