How well do these work? I've seen several brands advertised - it foams up inside the bore and dissolves both carbon and copper.  

I don't have much use for them, but I'd rather use that on my chrome-lined bores once a year than scrub with an ammonia-based solvent. Might be good for pistols too.

i have breakfree bore cleaning foam.  It goes in the barrel the color and consistency of shaving cream.  It comes out greenish blue when you swab it out with a patch.  Definately works on copper.

I've used BreakFree Bore Cleaning Foam.
It's okay.  It can only do so much per application.
I found its' limitations while testing it in the bores of two military surplus rifles.
For use in rifles with new chrome-lined bores, it is satisfactory.
Removing loose fouling (using patches soaked in BreakFree-CLP) prior to using BreakFree Bore Cleaning Foam will allow the foam to work more efficiently.

If you don't shoot often and/or only fire a handful of cartridges per shooting session, the foam should handle cleaning chores satisfactorily.
