if you're checking headspace, do you have to use the same bolt you're actually going to use in firing the rifle, or can you have a bolt laying around when the components already removed so you can just use that one any time you need to check headspace?

You use the actual bolt for the rifle.

Repeatedly checking the same bolt with various rifles does not ensure the actual bolt to be used is safe. Check the parts you are going to use to make sure they fit.

Headspace is measured from the face of the bolt.
Bolts vary.
