How do I tell the bolt catch spring from the disconnector spring?  One of these springs has a taper to it.  I think the spring with the taper is the disconnector spring.  When on the trigger does the larger part of the tapered spring go towards the trigger or towards the disconnector?

Your first guess was correct. Also, the bolt catch spring won't fit in the disconnector if my memory is correct. It has been awhile since I've built one.

The large end goes into the trigger housing so that the spring is captured and won't fall out of place. The notch in the disconnector will fit over the spring.

Yep, the large end of the disco spring snaps into place.
