On the barrel installation portion, one side has pins, the other has a ridge that looks a lot like the barrel extension.

My book shows the author using the pins to install the barrel, what is the other side for?

It's the one Del-Ton sells.  It's still in the process of shipping.

I have seen similar wrenches at gun shows.

My book, "The AR-15 Complete Assembly Guide", shows a Mil-Spec wrench (the rectangular one with three pins for the barrel extension).

And why is it called the "complete" assembly guide if he skips installing the grip ring, FSB and screw-on barrel attachments?

The side of the wrench with about 12 little nubs is the side you want against the barrel nut.
The two pins are for use on freefloat tubes, but they don't even do that good of a job.
There are MUCH better wrenches for freefloat tubes, depending on what type you have...
