I'm building a AR pistol from a DPMS lower receiver.  I recall someone saying a good buffer solution is to buy a shorty stock assembly and pitch the stock.  In this case (or in using any rifle tube), what holds the rear takedown spring and detent in place?

Get the ACE pistol kit.  It has all you need for a reliable buffer tube (entry CAR length) receiver end plate, buffer, spring, and cheek cushion.  It will also have a sling swivel.
You can also use a standard CAR 4-6 position buffer tube, standard receiver end plate, castle nut, buffer and spring.

Right, but don't you have to grind off all the holes to prevent someone from adding the stock back on and turning it into a SBR?  (Assuming you have no other guns that can use the stock)

No, you don't need to do anything.  If the pistol is the only AR you own, then do not also own the stock part that can attach to it.  If you own a rifle length upper or another complete rifle then you can own the stock piece to go on the tube.  As with the T/C Contender & Encore pistol/Carbine conversions you can own the stock so long as you also own a rifle length upper.
Remember you can switch back and forth between pistol and rifle and back to pistol all you want so long as the first build on the lower was a pistol.  If the first build on the lower was a rifle, then you need to SBR the lower to make it into a pistol type configuration.
 The only sticky part is if you only own a pistol upper AND the butt stock because in that case the only possible way it can be assembled is into an illegal SBR.  If you do not have the butt stock or you have a rifle length upper or rifle, then you are completely in the clear.  A lot of people are parnoid to the max and do things to prevent the stock being put on but it is totally not necessary, but if it makes them feel better, by all means they should do it then.

Carbine length buffer tubes that are round like a rifle length are available from RRA and Ace among others.  Model 1 sells a pistol buffer assembly that includes the short tube, a normal carbine buffer and spring and an end plate to hold the detent spring in place.

Take a look at the Bushmaster pistol buffer system, works great and is shorter than CAR buffer.
