I am new to the world of AR-15's and was wondering, is it lawfull to assemble a complete pre-ban type rifle using all pre-ban parts?

The age of the parts doesn't matter - only that the lower receiver is a grandfathered pre-ban.

New "pre-ban" parts are still made and sold for repairing or reconfiguring pre-ban guns.

So if you get a pre-ban grandfathered receiver or complete firearm, you can put any type of accessories on it you like, except for barrels shorter than 16" or making it less than 26" overall length, or making it full auto.

ATF's current position is that if you get any receiver other than one marked "Colt" and "AR-15", such as the SP1 or Sporter II series, it must be transferred only as a complete firearm, or it loses its grandfathered status.  Colt SP1's and Sporter II's can be legally transferred as lower-only because they're "named" assault weapons, instead of assault weapons defined by the number of evil features.
