Currently using 2 scope rings on a burris fullfield ii sitting on top of my bench AR would it be worth switching to a one piece mount or keep what i have

I think I saw a picture you posted in another thread - can't tell what brand of rings but if the scope height is where you like it then there's no real reason to change. Is there something you don't like about it that you think a one-piece mount would fix?

They are Burris rings but no I just see more one piece set ups than rings and was wondering if they are better than standard rings

My one piece RR scope mount is cheaper than a good set of rings. Might explain why you see more one piece scope mounts

Nope, they're not "better". The main reason for a one piece mount - you'll notice the majority are cantilevered forward which allows you to mount the scope further forward if needed to get the correct eye relief. If your scope is postioned where you like it then I wouldn't change a thing.
